Almost every day I have a salad for lunch. I love all my veggies (thanks mom!) but let’s be honest–sometimes salad can get a bit, well….boring.
But I’ve discovered a salad that will rekindle your love for that bowl of veggies.
The combination of the creamy avocado and the tart grapefruit makes this salad explode with delicious flavors! Eat this with a few whole grain crackers, or a slice of wheat toast, and you have the perfect balanced lunch.
Want to make this vegan or vegetarian? Just swap out the chicken for some chick peas.
Avocado Citrus Salad

- 1 1/2 cup lettuce (chopped)
- 1/4 cup tomato (diced)
- 1/4 cup cucumber (chopped)
- 1/4 medium avocado (cut into bite sized pieces)
- 1/2 grapefruit (peeled and segmented--save juice)
- 3oz cooked chicken breast (cut into bite sized pieces)
- 1 tablespoon olive oil
|Wash and prepare the lettuce, tomato, and cucumbers, and avocado. Place into a generous sized bowl.|
|Over a small bowl, peel the rind from the grapefruit and cut into segments. Save the juice for the salad dressing.|
|Measure your cooked chicken and place in the salad bowl. *you can use baked chicken or rotisserie style*|
|Place olive oil into the bowl with your grapefruit juice and whisk to create a simple salad dressing.|
|Pour the dressing over your salad, and enjoy!|
