Some recipes are born out of necessity and some are born out of chance. This recipe is both.
It all started when I had two rotting bananas in my fridge that needed to be used and a desire have a healthy energy-packed snack.
I took what I had in my cupboards that day and made these delicious banana oat bars!
They are perfect for breakfast or a snack, served warm or cold. I like to munch on one before I go to the gym so I have some energy but not a full stomach. The best part is that you can put in your favorite add-ins and customize them the way you would like them.
Banana Oat Bars

- 2 very ripe bananas
- 2 cups rolled oats
- 1 1/2 teaspoon cinnamon
- 1/4 cup raisin or craisins (optional)
- 1/4 cup chopped nuts of your choice (optional)
- 1 tablespoon olive or coconut oil (to grease baking pan)
|Preheat your oven to 375 degrees|
|Mash your bananas using a fork (or your hands) in a medium sized bowl|
|Add your rolled oats and cinnamon and stir together|
|You can leave the bananas and oats as is, or add in your favorite "extras." I like to add craisins and whatever nuts I have around at the time|
|Spread your mixture into a greased 8x8 or 9x9 baking dish and bake in preheated over for 25 minutes|
|Allow to cool for 5-10 minutes before cutting into 9 bars|
